The Einkorn Pasta is low in gluten and needs to be boiled briefly and keeps cooking when warm - treat it gently, just like your gut wants to be. Emmer wheat is the godmother of all other wheat and makes a sublime pasta that is smooth, tasty and has bite. The Emmer wheat is a little more robust compared to Einkorn. -
