Made using either Einkorn or Emmer wheat grown on the Dartington Estate or in Somerset under organic conditions. The Einkorn Pasta is low in gluten and needs to be boiled briefly and keeps cooking when warm - treat it gently, just like your gut wants to be. Emmer wheat is the godmother of all other wheat and makes a sublime pasta that is smooth, tasty and has bite. The Emmer wheat is a little more robust compared to Einkorn. -
