Tempus originally decided to start making their version of Bresaola (the Italian favourite originally from Valtellina, a valley in the Alps in northern Italy) to showcase the quality of beef that exists in the ex-dairy arena. In  2023 they introduced a new recipe for their Bresaola – a delicate blend of spices including salt, garlic powder, rosemary, black pepper have been used to enhance the wonderful flavour from this beef. Best served with rocket and tomato salad with a light vinaigrette.
