Proudly introducing Cantabrian anchovies, sustainably caught each spring in the Bay of Biscay. These are premium anchovies, renowned for their meatiness, smooth texture and intense flavour. Engraulis Encrasicolus are found only in the Bay of Biscay. The Arroyabe fishermen use purse seine nets cast over the surface of the sea in order to eliminate collateral catch and enable the long term survival of the species.
