It’s always a pleasure to meet with our producers, not to mention interesting finding out more about each brand’s back-story. This month, we met with Paul Gilder, Media Manager for LittlePod. To say LittlePod has been on a journey in the last fourteen years would be somewhat of an understatement. This post not only makes for fascinating reading, but highlights the importance of the work LittlePod does, which we are proud to support by distributing their products.
GR – LittlePod was started to educate consumers and encourage farmers to keep producing real vanilla. What was it specifically about vanilla that ignited the passion for the business?
LittlePod – Our passion for REAL vanilla was first sparked when Janet Sawyer MBE BEM, LittlePod’s founder and Managing Director, hosted a talk at the Village Hall in Farringdon, here in East Devon. The speaker was a close friend who had worked in the vanilla industry for 35 years. He introduced Janet to Patricia Rain – aka the Vanilla Queen – who is a chef, author and sustainability expert, based in the United States. Patricia, who had long done tireless work on behalf of the farming communities in the world’s Equatorial regions, told Janet that vanilla could be lost within a generation if we didn’t act immediately. Janet realised that consumers in the West had lost touch with the story of vanilla, what it is, where it comes from and why it is so important. Determined to make a difference, she launched LittlePod and that is how our Campaign for Real Vanilla first began. Fourteen years later, we’re still supporting the farmers and telling that story.
GR – You formed a fruitful partnership with Made, your vanilla farmer in Indonesia, and in 2022 harvested your first vanilla pods from the LittlePod orchard in Bali. Why did you choose Indonesia over other vanilla-producing countries to establish your orchard?
GR – The LittlePod orchard was established in 2012, which means it was 10 years before you harvested your first vanilla pods. Why did it take so long?
LittlePod – Growing vanilla is a long and time-consuming process! People don’t realise that from planting, it takes three-and-a-half years for the orchid to flower. The flowering season is six weeks long, but each flower lasts for just a single day. The vanilla farmers must individually pollinate every flower by hand, after which it takes a further nine months for the bean to mature on the vine. Once the pods have been harvested, you need to allow a further 18 months for curing and conditioning and you can’t rush these things. Once we had committed to setting up our orchid in collaboration with Made, we had to get permission from the Indonesian government and then convince the farmers in Bali that it was a good idea. That wasn’t a straightforward task and there was some scepticism because the farmers had lost a lot of money in the past trying to re-establish vanilla. We did have a small harvest after five years, but since then production has moved to a state-of-the-art conditioning facility, which has helped us to process more and more pods. Now we have a tonne of vanilla and thanks to the hard work of the farmers in Bali, our orchard is thriving.
GR – In 2020, you toasted the launch of LittlePod in Japan. Can you tell us more about this?
LittlePod – We were due to attend Foodex in Tokyo, the largest food trade show in Asia, in 2020. Unfortunately, due to the Covid pandemic, the event couldn’t go ahead. We had invested so much into the trip that Janet decided to go to Japan anyway. It proved to be a good decision. Janet met lots of people, made some great connections and even managed to find a distributor and importer, which is no mean feat in such a short space of time! Our team in Tokyo have worked hard ever since to tell our story and establish LittlePod in Japan and it was a delight to return to Japan this year to support them, give our thanks and to exhibit at Foodex at last. Our first customer in Japan was the renowned Barakura English Garden. We received a fantastic response and look forward to recruiting a new generation of LittlePodders in Japan and beyond.

GR – What other countries sell your products and what plans do you have for the future of the business?
LittlePod – LittlePod products are sold all over the world. Within one week of launching LittlePod in 2010, our products could be bought in Germany and Portugal, and we’ve established ourselves as a truly international business during the subsequent years. LittlePod is in Estonia, the Czech Republic, Slovakia, Sweden and lots of other countries besides. We have a wonderful distributor in Hong Kong, who is preparing to take our products to China. We’re stocked in Canada, the United States and Australia. The list is endless. We’re also working hard to reach more customers here in the UK and we’re so grateful to GR Fine Foods for helping us to spread the word about REAL vanilla and its importance to the planet and all its people. We value GR’s support so much and are appreciate of all your efforts. Thank-you!
GR – Do you ever partner with other manufacturers to create products that feature your vanilla? If so, can you tell us about the criteria you use when deciding which manufacturers to work with?
LittlePod – Yes, LittlePod’s vanilla (and our other ingredients) are used by lots of manufacturers in their wonderful products all over the UK and beyond. We like to know that our products are going to be used in fine foods by companies who do things well and value real ingredients. These companies understand that artificial vanillin is an inferior synthetic substitute that is a byproduct of a petrochemical that is used in the wood pulp industry. Real vanilla, on the other hand, contains more than 250 complex compounds and can be used alongside other great ingredients to round out flavours and produce top-quality products. Over the years, we’ve also collaborated with other companies to produce our own vanilla beer, shortbread and ice cream, and we love to partner and work with people who are experts in their field. Right now, we are working to develop a new vanilla tea! Watch this space…
GR – What makes LittlePod’s products different to other similar products on the market and why should people buy them?
LittlePod – We think that LittlePod’s products speak for themselves. We continue to receive recommendations and endorsements from our customers all over the world and the comments that we get are worth more than anything we could say. Master Chef Peter Gorton says, “I love using LittlePod; every chef should have it. It’s so versatile and saves so much time without compromising on quality.” During our time in Tokyo, we met Frederik Walther, who is the Executive Chef at the British Embassy in Japan. He said that our vanilla paste is ‘an upscale product with a beautiful design and a fantastic story’. Frederik is recommending LittlePod’s vanilla paste to other chefs in Japan and we couldn’t be more grateful to all those who continue to recommend and advocate the use of our products. The food manufacturers who use LittlePod in their products are forever winning various accolades and awards and the feedback that we receive is so positive. Many of these companies have been with us for over ten years, which says an awful lot. When we went to Japan in March, there was an obvious language barrier for us to overcome. But our products did the talking for us and we got a great response.
GR – For novice cooks wanting to introduce LittlePod products into their cooking, which product would you recommend starting with?
LittlePod – Our natural vanilla paste, of course! When LittlePod launched in 2010, we were the first company to bring a vanilla-paste-in-a-tube to market and it has proved popular ever since. This innovative product saves so much time and hassle and it makes it so simple to use REAL vanilla every day. You don’t need to spend time splitting and scraping vanilla pods – each 100ml tube is equivalent to 20 vanilla pods, seeds and all, and it’s a very versatile product. You can use it in all your baking, but there’s so much more to it than that. We love to add it to porridge and smoothies. You can rub it into duck, pork and chicken, use it to liven up a salad dressing – we call this vanillaigrette – or make a marinade for fish, the options are endless. One teaspoon of LittlePod’s vanilla paste is the equivalent of one vanilla pod and it’s great for portion control. Chefs love our vanilla paste because the tube is the perfect size and easy to handle and, with its flip-top lid, it’s so easy to add a squeeze to all manner of dishes, both sweet and savoury. When we first launched our vanilla paste in a tube, it was described as a ‘much-needed evolution for the kitchen’. Fourteen years later and still going strong, that has proved to be the case.
GR – What is your favourite LittlePod recipe and why?
LittlePod – There are so many to choose from! Janet wrote a cookbook in 2014, which is packed with all our favourite real vanilla recipes. If we had to pick one, we’d plump for our Chocolate and Beetroot Fudge Cake, which has become LittlePod’s signature bake. Luxurious, delicious and gooey, Janet devised this recipe herself. Beetroot is her favourite vegetable; it has great health benefits, and she loves to eat it in all its forms. This was a chance to include it in something indulgent and, having developed and perfected the recipe in the LittlePod kitchen, this has become a firm favourite here. This went on to be featured in Delicious Magazine and was named a Cake fit for a Queen as part of the Diamond Jubilee celebrations in 2012. Twelve months earlier, we celebrated LittlePod’s first anniversary with this cake at Chelsea Physic Garden and it has featured in all our subsequent celebrations ever since!
