This delicious savoury recipe serves 6 and includes Littlepod’s Natural Vanilla Paste.

Ingredients

For the pork

2 trimmed pork tenderloins

210ml olive oil

2 tsp garlic, chopped fine

2 tsp rosemary, chopped fine

2 tsp fresh thyme, chopped fine

2 tsp sage, chopped fine

For the Cider pepper glaze

450ml Hunts cider

2 granny smith apples, peeled and

cut into ½ inch pieces

2 tbsp cider vinegar

2 tbsp honey

2 tbsp LittlePod natural vanilla paste

1 tsp garlic, chopped fine

1 sprig of fresh thyme

1 tsp mustard seeds

3 juniper berries, crushed

1 tsp freshly ground pepper

2 tsp LittlePod organic coffee extract

 

Method

For the pork

1 – Combine the olive oil, garlic, rosemary, thyme and sage in a tray.

2 – Add the pork and turn to thoroughly coat, cover and refrigerate overnight.

3 – Remove the meat from the marinade, pat dry with paper towels and season to taste with salt and pepper.

4 – Place the pork tenderloins in a hot frying pan and cook until golden brown on all sides.

5 – Place the pork tenderloins in a roasting tray and put in the oven.

6 – Cook for 8 – 10 minutes at 220c then add some of the cider pepper glaze and allow to rest for 5 minutes.

7 – Pour on a little more of the cider glaze, carve the pork and serve on a bed of pea and sweetcorn risotto

For the Cider pepper glaze

1 – Combine the cider, apples, vinegar, honey, garlic, thyme, mustard seeds and juniper berries in a medium stainless steel saucepan and bring to a boil over a high heat.

2 – Lower the heat to a simmer for 20 minutes or until the apples are tender.

3 – Strain the mixture into another saucepan, add the pepper, vanilla paste and organic coffee extract and reduce to the desired consistency, a nice glaze.
